Sorbet, not to be confused by the American dessert “sherbet” which contains dairy, is a frozen dessert made with sweetened water and flavored with fruit purée, wine, and/or liqueur.

Ingredients:
1 cup granulated sugar
1 ½ cups water
3 Tablespoons lime juice
2 qt. fresh raspberries
Directions:
1. Combine the sugar and the water in a medium sauce pan and bring to a boil and simmer for about 2 minutes, add the raspberries and bring to a light simmer.
2. Cool the mixture, add the lime juice and puree using a blender. Strain the mixture thru a fine sieve.
3. Pour the mixture into an ice cream maker and churn until the mixture thickens for 20-30 minutes.
4. Chill the mixture in the freezer for a 1-2 hours until thick. Serve
