Empanadas can be made in a variation of ways and can either be baked or fried. Many different countries have their own way of making them. They can be prepared with many different types of fillings, from traditional flavorsome fillings to mouthwatering sweet fillings. Have fun when making your empanadas and try a variety of different fillings so every bite is a surprise!

1 ½ lbs Chorizo
1 medium onion
1 tsp garlic
2 Poblano peppers (Fire roasted)
1 ½ cps sheared Chihuahua cheese
1. Brown the chorizo in a heavy skillet. Add the onion and garlic and cook until the onion is just soft. Drain off any excess fat. (Set aside) Roast poblano peppers take skin and seeds off, cut into medium diced. Mix with chorizo. Add cheese.
2. Place 1 Tablespoon of the chorizo mix in the center of each circle.
3. Fold into a half-circle. Crimp the outer edge with a fork to seal.
4. Brush with egg wash
5. Baked on preheated oven at 375°F for 30-35 minutes
